Pork with mustard and quark

Ingredients

| 1 | tablespoon | Olive oil |
| 454 | grams | Pork fillet; sliced (1lb) |
| 2 | Cloves garlic; crushed | |
| 4 | Salad onions; chopped | |
| 125 | grams | Button mushrooms; quartered (4oz) |
| 2 | tablespoons | German mustard |
| 1 | 200 gram car quark | |
| 2 | tablespoons | Freshly chopped thyme |
| 2 | tablespoons | Freshly chopped parsley |
| Salt and freshly ground black pepper | ||
| 2 | teaspoons | Cornflour blended with |
| 1 | tablespoon | Water |
Directions
1. Heat the oil, add the pork and garlic and cook for 4-5 minutes until browned.
2. Add the onions and mushrooms and cook for a further 3-4 minutes.
3. Stir in the mustard, quark , thyme, half the parsley seasoning and blended cornflour. Cook for a further 2-3 minutes.
4. Spoon into a serving dish and sprinkle with the remaining parsley.
