Pork with mustard and quark

Ingredients

454gramsPork fillet; sliced (1lb)
2Cloves garlic; crushed
4Salad onions; chopped
125gramsButton mushrooms; quartered (4oz)
2tablespoonsGerman mustard
1200 gram car quark
2tablespoonsFreshly chopped thyme
2tablespoonsFreshly chopped parsley
Salt and freshly ground black pepper
2teaspoonsCornflour blended with
1tablespoonWater

Directions

1. Heat the oil, add the pork and garlic and cook for 4-5 minutes until browned.

2. Add the onions and mushrooms and cook for a further 3-4 minutes.

3. Stir in the mustard, quark , thyme, half the parsley seasoning and blended cornflour. Cook for a further 2-3 minutes.

4. Spoon into a serving dish and sprinkle with the remaining parsley.
