Pork and apple schnitzel

\N | \N | Pepper; to taste |
1 | cup | Thick apple sauce |
1 | tablespoon | Sage; freshly chopped |
2 | cups | Dry breadcrumbs |
\N | \N | Canola oil to shallow fry |
Season pork with pepper. Combine applesauce and sage on a plate, coat schnitzels on both sides. Place into breadcrumbs to cover schnitzels and refrigerate 30 minutes. Heat oil and shallow fry (about 2 to 3 minutes each side) until golden. Serve with potato and celery salad and mixed salad greens.
