Pork and apple schnitzel

Quantity Ingredient
8 \N Pork Leg Schnitzels
\N \N Pepper; to taste
1 cup Thick apple sauce
1 tablespoon Sage; freshly chopped
2 cups Dry breadcrumbs
\N \N Canola oil to shallow fry

Season pork with pepper. Combine applesauce and sage on a plate, coat schnitzels on both sides. Place into breadcrumbs to cover schnitzels and refrigerate 30 minutes. Heat oil and shallow fry (about 2 to 3 minutes each side) until golden. Serve with potato and celery salad and mixed salad greens.

NOTES : Preparation time: 10 minutes + 30 minutes chilling time. Pork cooking time: 6 minutes.
