Poached pears with non-fat chocolate sauce

| 2 | tablespoons | Freshly squeezed lemon juice |
| 1 | Cinnamon stick | |
| 1 | Vanilla bean | |
| 4 | Pears; peeled and cored | |
| 1 | cup | Water |
| ¾ | cup | Granulated sugar |
| 1 | cup | Unsweetened alkalized cocoa powder; sifted |
| 1 | teaspoon | Vanilla extract |

CHOCOLATE SAUCE
1. In a medium non-reactive saucepan set over medium-high heat, bring the water, sugar and lemon juice to a boil.
2. Reduce the heat to a simmer, and add the cinnamon stick and vanilla bean.
3. Place the pears in the simmering liquid, and cook until the pears can be pierced with a knife, about 15-20 minutes.
4. Drain and cool slightly. Place in small bowl and drizzle with the chocolate sauce.
How to Prepare the Sauce:
1. In a medium saucepan over medium-high heat bring the sugar and water to a boil for 1 minute; whisk in the cocoa powder.
2. Add the vanilla extract, and continue whisking until the mixture is smooth and begins to thicken, about 3 minutes. Let cool for 3-4 minutes.
