Heat a pizza stone in a hot oven. Cook the onions in some butter with the thyme and chopped garlic until caramelised.
Place the rolled pizza dough on the floured stone and pour some olive oil on to the pizza. Spread the onions on the dough and scatter with gorgonzola and rosemary.
Cook for 8 minutes.
