Pina colada tofu pie

1poundsTofu, cut up and drained
tablespoonOil
cupPlus 2 tbsp honey
teaspoonCornstarch
1teaspoonVanilla
cupDrained vrushed pineapple
¾cupShredded unsweetened coconut

Directions

Tofu makes this a healthy dessert without sugar. Great for people on restricted diets.

Blend well all ingredients. Bake at 350 F for 20-30 minutes. Let cool to set.
