Pina colada tofu pie

Ingredients

| 1 | Pie crust (regular or graham cracker) | |
| 1 | pounds | Tofu, cut up and drained |
| 1½ | tablespoon | Oil |
| ⅓ | cup | Plus 2 tbsp honey |
| 1½ | teaspoon | Cornstarch |
| 1 | teaspoon | Vanilla |
| 1¼ | cup | Drained vrushed pineapple |
| ¾ | cup | Shredded unsweetened coconut |
Directions
Tofu makes this a healthy dessert without sugar. Great for people on restricted diets.
Blend well all ingredients. Bake at 350 F for 20-30 minutes. Let cool to set.
