Picante chicken 'n rice

6 | eaches | Boneless, skinless chicken breast halves |
x | Salt; to taste (optional) | |
¾ | cup | Onion; coarsely chopped |
3 | larges | Garlic cloves; minced |
1 | tablespoon | Vegetable oil |
1½ | cup | Chicken broth |
1 | cup | Medium red salsa or picante sauce |
1 | cup | Uncle Ben's Converted Brand rice |
1 | each | Ripe avocado; peeled and sliced |
1 | medium | Tomato; coarsely chopped |
½ | cup | Cheddar or Monterey Jack cheese; shredded (2 oz.) |
Directions
Sprinkle chicken breasts with salt; set aside. Cook onion and garlic in oil in 10-inch skillet 2 minutes. Add chicken broth and salsa.
Bring to a boil. Stir in rice. Arrange chicken breasts over rice.
Cover tightly and simmer 20 minutes. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes. Garnish with avocado, tomato and cheese. Serves 6.
