| 3 | Carrots; finely grated | |
| 1¼ | cup | Brown sugar |
| ¼ | cup | Honey |
| 1 | teaspoon | Vanilla |
| 4 | Eggs; lightly beaten | |
| 2 | teaspoons | Baking soda |
| 2 | cups | All-purpose flour |
| 2 | teaspoons | Cinnamon |
| Powdered sugar | ||
Directions
Combine the first seven ingredients in a large mixing bowl and combine well. Add the soda, flour and cinnamon and mix until well combined. Spray muffin tins with non-stick cooking spray and fill each muffin cup about ¾'s full. Bake at 350 for 20 minutes. Remove muffins from tins while still warm. When cool, sprinkle muffins with powdered sugar.
