Impressive yet quick and easy to make, this party
½ pack Frozen puff pastry, thawed
1 each Lkg 250g light cream cheese
cup Granulated sugar
1 teaspoon Grated lemon rind
½ cup Plain yogurt time dessert is
Heavenly tasting.
28 ounces (2-14oz cans) canned sliced peaches in juice, drained
½ cup Apricot jam
¼ cup Sliced almonds, toasted

Directions

PREP TIME: 20 MINUTES

BAKING: 15 MINUTES

CHILL: 1 HOUR

Roll pastry on lightly floured board to fit a 12 inch round pizza pan.

Place in pan and prick with a fork. Bake at 425F for 8-10 minutes or until lightly browned. Cool. Beat cream cheese, sugar and lemon rind until smooth. Blend in yogurt. Spread evenly over crust, leaving a ½ inch border. Place drained peaches on paper towels to dry thoroughly. Arrange on top of filling. Melt apricot jam and brush over fruit. Chill about 1 hour.
