½ cup | Shortening |

1 cup | Pecans; finely chopped |
1 teaspoon | Vanilla extract |

Puree peaches with 6 tb sugar. (should yield 2¼ c.) Combine flour baking powder, soda, salt and cinnamon. Set aside. Combine 1 ½ c.
sugar and shortening - cream together. Add eggs and mix. Add puree and dry ingred. Mix til moist. Stir in nuts and vanilla. Spoon into well greased 9x5x3" loaf pans (2). Bake @ 325 for 55-60 min. Cool 10 min. in pan. Turn out on rack and cool completely. I have used ½ peaches and ½ pears for a variation. It turned out very good.
