Pea soup with coriander

Ingredients

1Onion; finely chopped
1Clove garlic; finely chopped
1teaspoonGround coriander
1Vegetable stock cube
600millilitresWater; (1 pint)
400gramsFrozen peas; (13oz)
Salt and freshly ground black pepper
1142 ml carto single cream
2tablespoonsFresh coriander; finely chopped

Directions

Heat the oil, cook onion and garlic until soft. Add the ground coriander and cook for 1 minute.

Dissolve the stock cube in 600ml (1pint) boiling water and add to the pan with the peas and cook gently for 15 minutes.

Liquidise until a smooth puree. Season.

Stir in single cream and fresh coriander just before serving.
