Pea and coriander soup

Ingredients

55 grams Butter
140 grams Onion; finely chopped
2 Cloves garlic; peeled and chopped
1 Green chilli; seeded and finely
; chopped
450 grams Fresh peas; frozen ones are
; also fine
900 millilitres Chicken stock
2 tablespoons Freshly chopped coriander
Salt and freshly ground black pepper
Sugar
Softly whipped cream
Fresh coriander leaves

Directions

GARNISH

Melt the butter over a gentle heat and sweat the onion, garlic and chill for 3-4 minutes. Add the peas and cover with the stock. Bring to the boil and simmer for 7-8 minutes. Add the freshly chopped coriander and liquidize in a blender. Season with salt and pepper and add a pinch of sugar, which enhances the flavour. Serve with a swirl of whipped cream and a few fresh coriander leaves.
