Passion fruit curd

Ingredients

QuantityIngredient
6largesEgg yolks
½cupSugar
½cupFrozen passion fruit juice drink concentrate, thawed
1pinchSalt
Grated rind of 1 lemon
2tablespoonsFresh squeezed lemon Juice
4tablespoonsUnsalted butter

Directions

In the top of a double boiler, whisk egg yolks, sugar, hot juice, salt, lemon rind and lemon Juice. Cook over boiling water 8-10 minutes, stirring constantly, or until mixture thickens and clings to the back of a spoon. Remove from heat. Cool 3-4 minutes, stir several times. Stir in butter, one tablespoon at a time. Cover mixture and refrigerate until needed. Can be made one week m advance.
