Old-time lentil soup

Measure Ingredient
1 pounds Lentils
2 larges Celery ribs with tops; cut in thirds
1 large Carrot; scraped, halved
1 medium Onion; coarsely chopped
1 teaspoon Minced garlic
1 teaspoon Salt
⅛ teaspoon Freshly-ground black pepper
2 quarts Water
1 can Spam luncheon meat - (7 oz); cubed
1 tablespoon White vinegar

In large pot, combine lentils, celery, carrot, onion, garlic, salt, pepper, and water; bring to a boil. Cover and simmer 45 minutes. Remove from heat; cool slightly.

Place half of lentils and all celery and carrot in food processor or blender; process until pureed. Return to pot. Add Spam to soup. Bring to a boil; cover and simmer 15 minutes. Stir in vinegar. Mix well before ladling into soup bowls.
