Oatmeal macaroon cookies

Yield: 3 Dozen

Measure Ingredient
1 cup Butter
1 cup Sugar
⅔ cup Brown sugar
1 Egg
2½ cup Quick oatmeal
1 cup Flour
1 cup Coconut
½ teaspoon Salt
1 teaspoon Vanilla
½ teaspoon Soda dissolved in 2 T. hot water

Drop on ungreased cookie sheet and bake in 425 degree oven. Watch them carefully because they burn easily. They usually take me about 9-10 minutes. Remove while they still look a little gooey.

Let them sit a minute before removing from pan.
