No-fat chocolate cookies

Yield: 7 Servings

Measure Ingredient
3¼ cup Unsifted flour
2¼ cup Sugar
1 cup Unsweetened cocoa powder
½ cup Cornstarch
1 tablespoon Baking powder
1 teaspoon Baking soda
1½ teaspoon Salt
\N \N Sift together all ingredients. Store in tightly covered

2 \N Egg whites, lightly beaten
¼ cup Corn syrup
1 tablespoon Water
1 teaspoon Vanilla
2½ cup Basic Baking Mix (recipe above)
¼ cup Sugar

~=>Basic Baking Mix Use this premeasured mix to prepare chocolate cookies, brownies or a cake. Makes 7 cups of mix.

Preheat oven to 350~. Coat cookie sheets with nonstick vegetable-oil cooking spray.

Stir together egg whites, corn syrup, water and vanilla in medium-sized bowl. Stir in baking mix until well blended. Roll dough into 1-inch balls. Spread sugar on small flat plate. Place 2 inches apart on cookie sheets. Press balls flat with bottom of glass.

Bake in preheated 350~ oven for 6-8 minutes. Cool cookies on baking sheet on wire rack for 5 minutes. Remove cookies from sheet to rack to cool completely.

Per cookie: 61 calories, 1 g protein, .18 g fat, 14 g carbohydrate, 72 mg sodium, 0 mg cholesterol. Exhanges: ½ starch/bread, ½ fruit.
