Nippy carrot bake

Yield: 8 Servings

Measure Ingredient
\N \N Nonstick cooking spray
3 cups Carrots, cooked, mashed
3 \N Eggs, lightly beaten
2 cups Milk
1¼ cup Pepper cheese, (4 ounces)
1 cup Bread crumbs
2 tablespoons Unsalted butter, melted
\N \N Salt to taste
1 teaspoon Prepared horseradish
¼ cup Chives, finely chopped

1. Preheat oven to 350. Coat a 9-inch by 9-inch baking pan with cooking spray. Set aside. 2. In large bowl, combine carrots, eggs, milk, cheese, bread crumbs, butter, salt, horseradish and chives. Transfer to pan. Bake about 30 minutes, or until knife inserted in center comes our clean.
