|1||Green Pepper cut into half rings|
|1 medium||Spanish Onion cut into half rings|
|1½ cup||Dry Bread Crumbs|
|6||Ripe Tomatoes, sliced|
Preheat oven to 325 degrees. Lightly butter a baking dish. Melt 2 Tbsp. of Butter in a skillet. Saute' the green pepper and onion rings until soft.
Sprinkle the baking dish with ¼ of the bread crumbs. Cover with ⅓ of the tomato slices. Cover with ⅓ of the sauteed pepper and onion rings.
Season with salt and pepper. Make 3 layers. Dot with remaining 1 Tbsp of Butter. Bake for 45 to 60 minutes.
This is especially good made with ripe tomatoes fresh from the back yard garden! Enjoy!
