Nam prik dang (red chili sauce)

Measure Ingredient
40 \N Chilies, red; fresh --
\N \N Chopped
8 \N Garlic cloves -- crushed
4 tablespoons Sugar -- brown
4 tablespoons Fish sauce (Nam Pla)
½ cup Lime juice -- fresh

In a blender, grind all ingredients to a smooth sauce. Put in tightly closed jar and refrigerate.

Tamarind liquid may be substituted for the lime juice.
