Mushroom starter salads

Ingredients

| 1 | tablespoon | Mustard powder |
| 3 | tablespoons | Vegetable oil |
| 1½ | tablespoon | Wine vinegar |
| 1½ | tablespoon | Parsley, chopped finely |
| 1½ | tablespoon | Chives, chopped |
| 1 | teaspoon | Castor sugar |
| 12 | ounces | Mushrooms, thinly sliced |
Directions
Whisk together mustard, oil, vinegar, parsley, chives & sugar. Add mushrooms & toss. Cover & refrigerate for 2 to 3 hours. Spoon into dishes & serve.
