Mushroom starter salads

Ingredients

3tablespoonsVegetable oil
tablespoonWine vinegar
tablespoonParsley, chopped finely
tablespoonChives, chopped
1teaspoonCastor sugar
12ouncesMushrooms, thinly sliced

Directions

Whisk together mustard, oil, vinegar, parsley, chives & sugar. Add mushrooms & toss. Cover & refrigerate for 2 to 3 hours. Spoon into dishes & serve.
