Warm exotic mushroom salad

Ingredients

| 5 | Shiitake mushrooms; stalks trimmed, up | |

| 8 | ounces | Chestnut mushrooms; thickly sliced |
| 5 | Oyster mushrooms; up to 6 | |
| 2 | tablespoons | Sesame seeds |
| 3 | ounces | Baby spinach leaves |
Directions
Peel and segment one orange. Heat oil in a large frying pan. Add shiitake and chestnut mushrooms and cook for 3 minutes. Add oyster mushrooms, cover and cook for a further 2 minutes.
Add sesame seeds and grated rind and juice or remaining orange. Stir in the orange segments and spinach.
Heat through and serve immediately.
