Mom's stuffed mushrooms

Yield: 2 servings

Measure Ingredient
3 slices Bacon
⅓ cup Sharp Cheddar cheese, shred
½ teaspoon Chopped green onions
⅛ teaspoon Salt
12 mediums Mushroom caps
¼ cup Bacon grease

Fry the bacon, then drain and crumble. Combine bacon with cheese, onions and salt. (Mushroom stems can be chopped and added, also.) Dip mushroom caps in bacon grease; place on broiler pan. Fill caps with bacon-cheese mixture. Place tops of mushrooms 4 inches from broiling unit; broil 6 to 8 minutes. This recipe can be prepared ahead of time and refrigerated. Do NOT broil until just before serving as hor d'oeuvres. This recipe is especially good in complimenting a steak or roast.
