Mom's delicious lemon meringue pie

Yield: 8 Servings

Measure Ingredient
4 \N Island eggs; separated
1 cup Sugar
1 large Lemon; zest and juice of
2 tablespoons Sugar; juice of
1 \N Pie crust; (9 inch)

Beat yolks of 4 eggs with ¾ cup of sugar. Add lemon and cook in a double boiler until thick. Beat 2 egg whites with ¼ cup sugar and fold into cooked mixture. Put in a baked pie crust (Mom always used 9" pie' plates) and cover with beaten whites of 2 eggs with 2 tablespoons sugar added. Bake at 400 degrees for 10 minutes.
