Mom's delicious lemon meringue pie

4Island eggs; separated
1cupSugar
1largeLemon; zest and juice of
2tablespoonsSugar; juice of
1Pie crust; (9 inch)

Directions

Beat yolks of 4 eggs with ¾ cup of sugar. Add lemon and cook in a double boiler until thick. Beat 2 egg whites with ¼ cup sugar and fold into cooked mixture. Put in a baked pie crust (Mom always used 9" pie' plates) and cover with beaten whites of 2 eggs with 2 tablespoons sugar added. Bake at 400 degrees for 10 minutes.
