Mole posole

Yield: 8 servings

Measure Ingredient
½ \N Onion; minced
1 \N Green pepper; seeded and diced
1 \N Serrano chili; seeded and minced
2 teaspoons Vegetable oil
1 \N 15 oz can chopped tomatoes; with juices
1 \N 15 oz can kidney beans; rinsed & drained
1 \N 15 oz can white hominy; rinsed & drained
2 tablespoons Prepared mole sauce
1 cup Water

In soup pot, saute onion, peppers, and chili in oil over medium-high heat until onion is soft, about 4-5 minutes. Add remaining ingredients. Bring to a boil.
