Mocha-menthe mousse

Yield: 1 Servings

Measure Ingredient
1½ cup Milk
1 tablespoon Instant coffee granules
1 tablespoon Crème de menthe
⅛ teaspoon Mint extract
1 pack (3.4-ounce) choc. fudge instant pud. & pie filling mix
1½ cup Frozen whipped topping; thawed
\N \N Fresh mint sprigs
\N \N Cocoa


Process first 4 ingredients in a blender 2 minutes or until thickened. Pour into a bowl; gently fold in 1-¼ cups whipped topping. Spoon into 4 individual dessert dishes; chill. Top with remaining ¼ cup whipped topping, and garnish, if desired. Makes 4 servings.

To reduce fat and calories, substitute skim milk, 1 (1⅖-ounce) package sugar-free chocolate pudding and pie filling mix, and reduced-calorie frozen whipped topping.
