Minestrone-style turkey soup

1Meaty turkey carcass; cut apart
1tablespoonInstant chicken bouillon granules
1Bay leaf
2cupsCabbage; shredded
1canStewed tomatoes; cut up (14 1/2 oz.)
1canGreat northern beans; drain (15 oz.)
1canGarbanzo beans; drained (15 oz.)
1largeOnion; chopped
1Clove garlic; minced
¼cupSnipped parsley
1teaspoonDried basil; crushed

Directions

Combine turkey, bouillon, bay leaf, and 7 cups water. Bring to boiling; reduce heat. Cover; simmer 1 hour. Remove turkey carcass; cool. Remove meat from bones and chop. Discard bones. Strain broth.

Return broth and turkey to pan. Stir in cabbage, undrained tomatoes, beans, onion, garlic, parsley, basil, and ⅛ teaspoon pepper. Bring to boiling; reduce heat. Cover; simmer 25-30 minutes. Serves 6.
