Yield: 6 servings
|4 larges||Green peppers|
|Nonstick Cooking Spray|
|1 tablespoon||Ground Sirloin or Turkey|
|½ cup||Finely chopped onions|
|16 ounces||Can Tomatoes, Chopped, Undrained|
|½ cup||Long grain rice|
|1½ tablespoon||Worcestershire sauce|
|½ teaspoon||Dried oregano, crushed|
|¾ cup||Grated, mozzarella cheese|
Halve peppers lengthwise. Clean. Cook peppers in boiling water for 3 minutes. Drain and sprinkle insides with a little salt.
Spray a skillet with nonstick cooking spray. Cook hamburg or turkey and onion until onion is tender. Drain well.
Stir in tomatoes (undrained), uncooked rice, ½ c water, salt and pepper, worcestershire and oregano. Bring to a boil Cover and simmer for 20 min or until rice is tender. Stir in ½ of the cheese.
Fill peppers with mixture.
Put in baking dish and bake at 375 degrees for 15 to 20 minutes.
Remove from oven and immediately sprinkle with remaining cheese.
Remarks: These freeze very well.
