Ingredients

1largeOnion, sliced
4eachesGarlic cloves, chopped
1each1\" piece ginger, chopped
1tablespoonGaram masala
1teaspoonTurmeric
¼teaspoonDried red chilies
2poundsPotatoes, cubed
Salt
½cupWater
2poundsMushrooms, halved
1cupPeas, fresh or frozen

Directions

Heat ghee in large pot. Add onion & garlic & fry till browned. Stir in ginger & fry for 2 minutes. Add garam masala, turmeric & chili, stirring for a minute. Stir in potatoes, salt & water. Mix well, bring to a boil & simmer for 8 to 10 minutes. Stir occasionally.

Add mushrooms & peas & stir. Cook, covered, for 5 to 8 minutes.

Remove lid, raise heat & cook till ¾ of water has evaporated.

Stirring constantly. Serve with dal.
