Maple glazed pork and bartletts

Yield: 6 servings

Measure Ingredient
3 \N Fresh Northwest Bartlett Pears
¾ cup Maple flavored syrup
½ cup Brown sugar
2 tablespoons Prepared mustard
2 tablespoons Butter
1 tablespoon Whole cloves
2½ pounds Rolled trimmed pork loin roast; (2 1/2 to 3)
\N \N Salt and pepper

Place pork on rack in shallow roasting pan. Season with salt and pepper.

Insert meat thermometer. Roast at 325 degrees until thermometer registers 170 degrees, or about 35 to 40 minutes per pound. Meanwhile, halve and core pears, leaving skins on. Combine maple syrup, brown sugar, mustard, butter and cloves. Stir over low heat until the sugar has dissolved. During last 30 minutes of pork roasting time, place pears, cut side up, in roasting pan with pork. Baste pears and pork frequently with maple glaze. Serve glazed pear halves as accompaniment to pork. Serve with brown rice, or rissoto.

Always be sure to use ripe pears.
