Mango mayonnaise and shrimp

½cupMango puree; fresh or thawed frozen
¼cupLight sour cream
¼teaspoonSalt
teaspoonPepper
2tablespoonsLime juice
8ouncesMedium shrimp; cooked, shelled and deveined
20Melba rounds or toasts

Directions

In small bowl, combine mayonnaise, mango puree, sour cream, salt, pepper and lime juice. Spoon mayonnaise mixture onto melba rounds; top with a shrimp.

Makes 20 servings. Preparation time: About 10 minutes.
