Grilled shrimp with chipotle mayonnaise

8 | Bamboo skewers soaked in water | |
32 | Shrimp (small-to-med-sized) peeled and deveined | |
1 | tablespoon | Olive oil |
Salt and pepper to taste | ||
½ | Recipe Chipotle Mayonnaise | |
1 | tablespoon | Parsley, chopped |
Directions
After preparing the shrimp (heads-on if you like), thread 4 shrimp pn each skewer about 1-inch apart, making sure the shrimp stay flat.
Brush shrimp with black peppercorns and add salt and pepper to taste.
Grill shrimp over a hot fire about 1 minute on each side. Serve topped with Chipotle Mayonnaise and chopped parsley.
