Grilled shrimp with chipotle mayonnaise

Ingredients

Quantity Ingredient
8 Bamboo skewers soaked in water
32 Shrimp (small-to-med-sized) peeled and deveined
1 tablespoon Olive oil
Salt and pepper to taste
½ Recipe Chipotle Mayonnaise
1 tablespoon Parsley, chopped

Directions

After preparing the shrimp (heads-on if you like), thread 4 shrimp pn each skewer about 1-inch apart, making sure the shrimp stay flat.

Brush shrimp with black peppercorns and add salt and pepper to taste.

Grill shrimp over a hot fire about 1 minute on each side. Serve topped with Chipotle Mayonnaise and chopped parsley.
