1Carrot, peeled
1cupMushroom
3Diced tomato
3tablespoonsTomato paste
7cupsChicken stock, or vegetable
1teaspoonFreshly ground black pepper
1cupMacaroni, cooked
1cupChickpeas, drained
1cupItalian green beans, snipped
½cupShredded cabbage
2tablespoonsChopped basil, fresh
Parmesan cheese
Croutons

Directions

In a 5 quart pot, sautŽ the garlic in the olive oil for 10 minutes.

Add the onions, celery, zucchini, carrot, and mushrooms simmer covered for 30 minutes.

Add the macaroni, chickpeas, Italian green beans, cabbage, and basil simmer covered for another 30 minutes. To serve sprinkle bowl with Parmesan cheese and ladle soup over. Top with toasted croutons.
