Mamma mia minestrone

Yield: 15 Servings

Measure Ingredient
1 tablespoon Minced garlic
3 tablespoons Olive oil
2 smalls Onion
1 \N Stalk celery
1 medium Zucchini
1 \N Carrot, peeled
1 cup Mushroom
3 \N Diced tomato
3 tablespoons Tomato paste
7 cups Chicken stock, or vegetable
1 teaspoon Freshly ground black pepper
1 cup Macaroni, cooked
1 cup Chickpeas, drained
1 cup Italian green beans, snipped
½ cup Shredded cabbage
2 tablespoons Chopped basil, fresh
\N \N Parmesan cheese
\N \N Croutons

In a 5 quart pot, sautŽ the garlic in the olive oil for 10 minutes.

Add the onions, celery, zucchini, carrot, and mushrooms simmer covered for 30 minutes.

Add the macaroni, chickpeas, Italian green beans, cabbage, and basil simmer covered for another 30 minutes. To serve sprinkle bowl with Parmesan cheese and ladle soup over. Top with toasted croutons.
