Macaroni with corn relish & smoked turkey

Ingredients

10ouncesFrozen corn; thawed
2Celery stalks; diced
1mediumRed onion; diced
12ouncesSmoked turkey; diced
2teaspoonsVegetable oil
¼cupTomato sauce
¼cupBarbecue sauce
¼cupLow-sodium chicken broth (defatted)
¼cupRed wine vinegar
12Green olives, sliced

Directions

Cook pasta according to package directions. Drain and rinse pasta with cool water.

In a large bowl, stir together the corn, celery, red onion and turkey. In a medium bowl, whisk together remaining ingredients. Stir into corn mixture. Add pasta and toss well. Spoon into a serving bowl and sprinkle with olives.
