Grilled marinated turkey with corn and grilled pepper relish

Yield: 6 servings

Measure Ingredient
6 \N Boneless skinless turkey breast halves
1 cup Corn And Grilled Pepper Relish; see * Note
\N \N === GINGER-GARLIC MARINADE ===
1 cup Soy sauce; (preferably low sodium)
½ cup Coarsely chopped fresh ginger
½ cup Coarsely chopped garlic
¼ cup Fresh lime juice
¼ cup Honey

Combine all the marinade ingredients in a small saucepan and bring to a boil. Remove from heat and refrigerate until cool. Add the turkey breasts to the marinade and let marinate, refrigerated and covered, for 8 hours or overnight. Prepare a wood or charcoal fire and let it burn down to embers.

Remove turkey breasts from the marinade and pat dry, discarding the marinade. Grill the turkey for about 4 minutes on each side. Serve immediately, with the Corn And Grilled Pepper Relish spooned over. This recipe yields 6 servings.
