Macaroni and cheese with leeks

Measure Ingredient
\N \N Oil for frying
1 \N Leek; washed, dried and
\N \N ; julienne
½ cup Heavy cream
1 tablespoon Beulah spice
4 ounces Swiss cheese; divided
4 ounces Cheddar cheese. divided
1 cup Elbow macaroni; cooked
\N \N Salt and pepper to taste

Preheat oil to 375 degrees. Quickly fry leeks in oil for 3 to 4 minutes, or until golden brown. Place on a pepper lined plate to drain. Set aside.

Preheat broiler. Put heavy cream in a pan and bring to a simmer. Add seasoning and half of cheese, let reduce to a custard. Add macaroni. Place in buttered baking dish. Layer cheese over top and melt under broiler.

Serve with leeks as a garnish.
