Macaroni and cheese with leeks

Oil for frying
1Leek; washed, dried and
; julienne
½cupHeavy cream
1tablespoonBeulah spice
4ouncesSwiss cheese; divided
4ouncesCheddar cheese. divided
1cupElbow macaroni; cooked
Salt and pepper to taste

Directions

Preheat oil to 375 degrees. Quickly fry leeks in oil for 3 to 4 minutes, or until golden brown. Place on a pepper lined plate to drain. Set aside.

Preheat broiler. Put heavy cream in a pan and bring to a simmer. Add seasoning and half of cheese, let reduce to a custard. Add macaroni. Place in buttered baking dish. Layer cheese over top and melt under broiler.

Serve with leeks as a garnish.
