Lynn's green marsala

Measure Ingredient
10 \N Zucchini - shredded
3 \N Potatoes - shredded
1 \N Onion - shredded
1 \N Tomato - diced finely
1 \N Green jalopeno - shredded
1 \N Red jalopeno-shredded
1 \N Red banana pepper-shredded
1 \N Yellow banana
\N \N Pepper-shredded
1 pack Chopped spinach - thawed and
\N \N Squeezed
2 tablespoons Balsamic
1 \N Lime juiced
\N x Garlic-minced -lots
\N x Ginger-minced - lots
1 can V-8 juice or tomato juice
1 teaspoon Coriander
1 teaspoon Tumeric
½ teaspoon Cardomom
½ teaspoon Cinnamon
\N x Cilantro leaves to taste - I
\N \N Use alot

start with garlic and ginger-saute in some balsamic - add onion - add jalopeno and peppers - then add potato and zucchini -as it needs liquid - add v-8 to consistency you like. Add spinach. Season with above spices. At the very end throw in the cilantro leaves.

Serve on top of basmati rice with wheat berries ( I use2 c rice to 1 c wheat berries or bulgar wheat). It is very hot and spicy and tastes wonderful.
