|3 tablespoons||Shallots; minced|
|12||Peppercorns; coarsely ground|
|3 ounces||Marsala wine|
1. Combine the demi glace, shallots, & peppercorns in a sauce pan, simmer until the mixture thickens.
2. strain the sauce through cheesecloth and put sauce in a clean saucepan.
3. add wine & simmer, adjust seasonings with salt & pepper to taste.
