Measure | Ingredient |

3 tablespoons | Shallots; minced |
12 \N | Peppercorns; coarsely ground |
3 ounces | Marsala wine |
1. Combine the demi glace, shallots, & peppercorns in a sauce pan, simmer until the mixture thickens.
2. strain the sauce through cheesecloth and put sauce in a clean saucepan.
3. add wine & simmer, adjust seasonings with salt & pepper to taste.
