Ltallan vegtable soup

Ingredients

Quantity Ingredient
1 pounds Bulk ltalian sausage
1 medium Onion -- sliced
1 can Whole tomatoes
6 ounces With liquid, chopped
1 can Garbanzo beans -- l5 ounces
Drained
1 can Beef broth -- 14-1/2 ounces
cup Water
2 mediums Zucchini
Cut into 1/4-inch slices
½ teaspoon Dried basil
Grated Parmesan cheese

Directions

In a 3-qt. saucepan, cook sausage and onion; drain fat. Stir in tomatoes, beans. broth. water, zucchini and basil. Bring to a boil.

Reduce heat and simmer 5 minutes or until the zucchini is tender.

Sprinkle each serving with cheese. Yield: 6-8 servings (2 qts.) Recipe By : Taste of Home
