Low-fat tacos

Measure Ingredient
2 tablespoons Olive oil
1 pounds Ground turkey - white meat
1 pack Taco seasoning mix
2 tablespoons Flour
¼ cup Soy sauce
1 \N Head iceberg lettuce - shredded
2 larges Tomatoes - diced
1 bunch Chopped scallions
¼ cup Chopped cilantro
2 tablespoons Fresh lime juice
\N \N Hot sauce to taste
2 cups Low-fat jack or cheddar cheese
\N \N Low-fat or fat-free taco shells
\N \N Light sour cream for garnish

Directions: Heat a large skillet until hot. Add the olive oil and turkey.

Saute often and add the seasoning mix, flour and soy sauce. Cook until turkey is crumbly. Drain the meat mixture to remove fat. In a large bowl, combine the lettuce, tomatoes, scallions, cilantro, lime juice, hot sauce and cheese. Stuff the taco shells with turkey, then the lettuce mixture.

Top with sour cream.
