|2 tablespoons||Olive oil|
|1 pounds||Ground turkey - white meat|
|1 pack||Taco seasoning mix|
|¼ cup||Soy sauce|
|1 \N||Head iceberg lettuce - shredded|
|2 larges||Tomatoes - diced|
|1 bunch||Chopped scallions|
|¼ cup||Chopped cilantro|
|2 tablespoons||Fresh lime juice|
|\N \N||Hot sauce to taste|
|2 cups||Low-fat jack or cheddar cheese|
|\N \N||Low-fat or fat-free taco shells|
|\N \N||Light sour cream for garnish|
Directions: Heat a large skillet until hot. Add the olive oil and turkey.
Saute often and add the seasoning mix, flour and soy sauce. Cook until turkey is crumbly. Drain the meat mixture to remove fat. In a large bowl, combine the lettuce, tomatoes, scallions, cilantro, lime juice, hot sauce and cheese. Stuff the taco shells with turkey, then the lettuce mixture.
Top with sour cream.
