Low fat devil's food cookies

Yield: 30 servings

Measure Ingredient
¼ cup Margarine -- softened
½ cup Buttermilk* -- at room
\N \N Temperature
1 teaspoon Vanilla
2 \N Egg whites -- whipped
1½ cup Unbleached flour
½ cup Unsweetened cocoa powder --
\N \N Sifted
⅔ cup Granulated sugar
1 teaspoon Baking soda
¼ teaspoon Salt
2 teaspoons Powdered sugar -- sifted

Preheat oven at 350. Prepare baking sheets with cooking spray. In a mixing bowl, combine margarine, buttermilk, vanilla , and egg whites.

In another mixing bowl, combine flour, cocoa powder, sugar, baking soda, and salt. Mix wet ingredients with dry ingredients just until moistened. Drop dough by tablespoonfuls, 2" apart onto prepared baking sheets. Bake for 7 minutes. Sprinkle with powdered sugar.
