Lousiana blackened fish

Measure Ingredient
2 mediums Sized pomfrets
\N \N Olive oil for frying
3 \N Onions; (150 g)
25 grams Garlic
25 grams Cumin powder
1 teaspoon Chilli powder; (5 g)
½ teaspoon Oregano; (2 g)
½ teaspoon Parsley; (2 g)
1 teaspoon Lemon juice; (5 ml)
\N \N Salt to taste

THE MARINADE

SLIT the pomfrets and keep aside. Grind all the marinade ingredients to a paste and apply the mixture to the fillets.

Heat olive oil in a pan. Place the pomfret fillets, marinade side down and cook till golden brown. Serve on a bed of well browned onions with crispy lady fingers and corn bread.
