Linguine with ham, peas, and mushrooms

2 | tablespoons | Olive oil |
4 | Scallions, including tops, | |

8 | ounces | Mushrooms, thinly sliced |
6 | ounces | Ham, cut into matchstick |
Strips | ||
1¼ | cup | Frozen green peas, thawed |
And drained | ||
1 | cup | Cream |
3 | Cloves garlic, minced | |
¼ | teaspoon | Black pepper |
⅓ | cup | Parmesan cheese |
Directions
Cook the linguine according to package directions. Meanwhile, heat the oil in a deep skillet over moderate heat . Add the scallions and garlic and saute for 3 minutes. Add the mushrooms and saute 3 minutes longer. Add the ham and saute, stirring, for 1 minute. Add the peas, cream, and pepper, raise the heat to high and boil, uncovered for 3 minutes or until slightly reduced. Remove from heat. Drain the linguine and add to the skillet along with the cheese and toss lightly. Serve with additional cheese on the side if desired.
