Ingredients

¼cupChopped shallots
1tablespoonChopped garlic
1cupSliced zucchini (1 small)
1cupSliced yellow squash (1 med)
1cupBell pepper strips
1canCONTADINA Pasta Ready Chunky Tomatoes with Crushed Red Peppers (14.5 oz)
1canCONTADINA Tomato Paste (6oz)
¼cupDry white wine
½teaspoonSalt (opt)
2tablespoonsChopped fresh basil OR
1teaspoonDried basil, crushed
1packCONTADINA Refrigerated Linguine (9 oz)
Sliced ripe olives (opt)
Chopped fresh basil (opt)

Directions

In medium skillet, heat oil; saute shallots and garlic for 1 minute.

Add zucchini, yellow squash and bell pepper; saute for 3-4 minutes.

Stir in CONTADINA Pasta Ready Chunky Tomatoes, paste, wine and salt; simmer for 5-8 minutes or until vegetables are tender. Stir in basil; simmer for 1 minute. Prepare pasta according to package directions.

Pour sauce over pasta; garnish with olives and basil.
