Lentil marinara over pasta

Yield: 1 Servings

Measure Ingredient
1 \N Onion; chopped
2 \N Garlic cloves; crushed
2 \N Carrots; coarsely grated
2 \N Celery stalks; chopped
3 tablespoons Olive
⅔ cup Red lentils
1 can Chopped tomatoes; (14 oz.)
2 tablespoons Tomato paste
2 cups Vegetable Broth
1 tablespoon Fresh chopped marjoram; or 1 teaspoon
\N \N Marjoram
\N \N Salt and Frontier ground black pepper

In a large saucepan, gently fry the onion, garlic, carrots and celery in the oil for about 5 minutes, until they are soft. Add the lentils, tomatoes, tomato paste, broth, marjoram and seasoning. Bring the mixture to a boil then partially cover with a lid and simmer for 20 minutes until thick and soft. Serve over pasta, and use the marinara sauce as required.

Makes 6 servings.
