FIXINGS
Put lentils, rice, onion, oil and liquids into 2-qt. pot. Bring to a boil, cover and simmer 30 minutes. Add vegetables. Bring to a boil, covered and simmer 30 minutes longer. Now if it's been that kind of day, call it quits at this point and serve Lentil Stew! Protein: 41⅕ grams; Calories: 1052
On better days, mash stew, shape into patties, attain proper consistency by adding liquid, or wheat germ and dry milk. Coat patties with wheat germ. Brown in hot oil, 5 minutes per side. Tuck one patty in each pita, add "fixings" and pass the catsup! Kids love this supper. It's nutritious, inexpensive and meatless.
