Lemon berry cool n' easy pie

Ingredients

| ⅔ | cup | Boiling water |
| 1 | pack | Lemon flavor jello |
| ½ | cup | Cold water |
| Ice cubes | ||
| 2 | teaspoons | Grated lemon peel |
| 1 | tablespoon | Fresh lemon juice |
| 8 | ounces | Tub cool whip |
| 1 | cup | Sliced strawberries |
| 1 | Graham cracker pie crust | |
| Berries for garnish | ||
| Mint for garnish | ||
Directions
1. Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
2. Mix cold water and ice to make 1¼ cups. Add to gelatin, stirring until slightly thickened. Remove any remaining ice.
3. Stir in lemon peel, juice and whipped topping with a wire whisk until smooth.
4. Stir in strawberries. Refrigerate 20 to 30 minutes or until mixture is very thick and will mound.
5. Spoon into crust. Refrigerate 6 hours or overnight until firm. Garnish with additional fruit and whipped topping and mint, if desired.
