Lemon & garlic stuffed mushrooms

4 | larges | Flat mushrooms, wiped & trimmed |
2 | ounces | Margarine |
1 | each | Garlic clove, minced |
2 | tablespoons | Parsley, chopped |
½ | each | Lemon, peel freshly grated |
¼ | teaspoon | Salt |
Pepper, to taste |
Directions
Lightly oil a baking sheet. Preheat oven to 375F.
Chop the mushroom stalks. Set the caps aside.
Beat the margarine until it is soft. Stir in the garlic along with the mushroom stalks, parsley, lemon peel, salt & pepper. Divide this mixture evenly between the mushroom caps. Place on the baking sheet & cook for 20 minutes. Serve immediately either as is or else on top of freshly toasted wholewheat bread.
