225gramsGlace cherries
300millilitresStout
150millilitresWhisky
150millilitresOrange juice
1Orange; zest of
3tablespoonsBlack treacle
250gramsUnsalted butter; slightly softened
250gramsSoft brown sugar
5Eggs; lightly beaten
350gramsPlain flour
teaspoonBaking powder
2teaspoonsAllspice
100gramsBrazil nuts; halved
Marzipan and Royal icing for decoration

Directions

1 Line the cake tin. In a large pan, place the dried fruit, cherries, stout, whisky, orange juice, zest and treacle, and bring to the boil.

2 Simmer gently for 10 minutes. In a large bowl, combine the remaining ingredients and beat together until smooth. Fold in the boiled fruit.

3 Spoon the mixture into the prepared cake tin and level the top. Bake for 3½-4 hours. Cool in the tin, remove and decorate.
