Last minute christmas cake

Measure Ingredient
1 kilograms Dried mixed fruit
225 grams Glace cherries
300 millilitres Stout
150 millilitres Whisky
150 millilitres Orange juice
1 \N Orange; zest of
3 tablespoons Black treacle
250 grams Unsalted butter; slightly softened
250 grams Soft brown sugar
5 \N Eggs; lightly beaten
350 grams Plain flour
1½ teaspoon Baking powder
2 teaspoons Allspice
100 grams Brazil nuts; halved
\N \N Marzipan and Royal icing for decoration

1 Line the cake tin. In a large pan, place the dried fruit, cherries, stout, whisky, orange juice, zest and treacle, and bring to the boil.

2 Simmer gently for 10 minutes. In a large bowl, combine the remaining ingredients and beat together until smooth. Fold in the boiled fruit.

3 Spoon the mixture into the prepared cake tin and level the top. Bake for 3½-4 hours. Cool in the tin, remove and decorate.
