Ingredients

1poundsWhite fish, cut in chunks
1cupOnion, sliced
1teaspoonLacama (see recipe)
1cupPotatoes, diced
1cupCarrots, diced
½teaspoonSalt
1teaspoonSweet red pepper
1cupTomatoes, cubed
½teaspoonSaffron
½cupOlive oil, heated
1Red pepper, sliced

Directions

Layer all ingredients. Pour over the hot oil. Top with the pimento.

Simmer slowly for about ¾ hour. Do not mix. Serve: Hot, with drops of lemon juice.
