Jam and coconut muffins

| 2½ | cup | Flour |
| 3 | teaspoons | Baking powder |
| ½ | cup | Caster sugar |
| 1 | Egg | |
| 1¼ | cup | Coconut |
| 1 | teaspoon | Vanilla essence |
| 1¼ | cup | Milk |
| 3 | tablespoons | Jam |
| 6 | tablespoons | Vegetable oil |
| Little extra coconut for garnish | ||
Directions
Preheat oven to 400øF, prepare pans. Sift flour & baking powder, stir in sugar & coconut. Beat egg, vanilla, milk & oil together. Add dry mix to wet mix until just combined. Place a large tablespoon of batter into each pan, add a teaspoon of jam to each and the rest of the batter. Sprinkle tops with a little coconut. Bake for 25-30 mins or until well risen & firm to the touch. Makes 9-10 muffins.
