Jalapeno onion smoked chicken

4 \N Chickens; (whole)
1 gallon Water
1 cup Salt
⅓ cup Italian seasoning
2 tablespoons Garlic powder
3 cups Star jalepeno nacho rings; (w/1 cup juice)
⅓ cup Black pepper
2 tablespoons Liquid smoke
1 \N Onion choped
½ cup Olive oil
2 teaspoons Maple extract
½ cup Brown sugar
½ cup Marachine cherry juice
¼ cup Brown sugar
1 teaspoon Cayenne
1 dash Johnnys salad elegance
½ teaspoon Garlic powder
⅓ cup Fiesta chili powder
2 tablespoons Olive oil

BRINE

FINISH SAUCE

Brine: Brined 6 hours in frig

Finish sauce: Whisk this up and mop ½ hour before finish and once when you take chickens off.

When I first put the chickens on I also put a coat of olive oil on then and lightly sprinkled with Alpine Touch and cracked black pepper.
